In honor of pumpkin season, I just had to make these cookies! I love all things pumpkin like this chocolate pumpkin cake, and this pumpkin bread, and this pumpkin BBQ sauce, and this pumpkin pie quinoa porridge to name a few! BUT, those of you who know me well, know that I heart cookies the most! I especially love soft pumpkin chocolate chip cookies and this recipe delivers in perfect texture and taste! These cookies are perfectly sweet with the right balance of flavors. You are gonna LOVE these! Enjoy!

Pumpkin Chocolate Chip Cookies

1 1/4 cups unsweetened pumpkin

1/4 cup applesauce

2 tablespoons coconut oil

1/4 cup maple syrup

1/2 teaspoon vanilla

1 1/2 cups gluten-free flour

1/2 teaspoon guar gum

1/4 cup coconut sugar

1 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon himalayan pink salt

1/2 cup chocolate chips (I like to use Enjoy Life Mega Chunks)

Preheat oven to 350 degrees. Combine pumpkin, applesauce, coconut oil, maple syrup, and vanilla in a medium bowl. Add flour, guar gum, coconut sugar, baking soda, cinnamon, and salt. Mix until just combined. Fold in chocolate chips. Make round cookie scoops with a 2 tablespoon cookie scoop. Place cookie scoops on a silpat-lined or parchment-lined baking sheet. Bake 14-15 minutes or until lightly browned. They will harden a bit as they cool, but will still be soft and delicious!
