Breakfast really is the most important meal of the day. It sets a precedent for the rest of the day. I need good, quality fuel in the morning to get me going and porridge is a go-to breakfast for me. I love this porridge! It has been a favorite breakfast of mine for years. This porridge is full of protein, fiber, whole-food fat, flavor, and comfort all in one bowl. This porridge is delicious hot or cold. I find myself eating this quinoa porridge as a cold snack, which is so good! This just may be the new breakfast of champions!

Quinoa Porridge 3

1 1/2 cups water

3/4 cup quinoa

2 cups coconut milk

1/4 cup dried cranberries

1/4 cup raisins

1/4 cup chopped pecans

1/2 cup applesauce

2 tablespoons honey

1 teaspoon cinnamon

salt to taste

1/2 tablespoon coconut oil

1/4 teaspoon vanilla extract

Toppings: shredded coconut, coconut milk

Bring water and quinoa to a boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover, and simmer for 20 minutes. Remove from the heat and add cranberries, raisins, and pecans.
Stir together the coconut milk, applesauce, honey, cinnamon and salt in a bowl until smooth. Pour the milk mixture into the saucepan with the quinoa. Place the pan over medium heat. Cook and stir until the mixture becomes thick and creamy, 5 to 10 minutes. Remove from the heat. Stir in the coconut oil and vanilla and serve warm.
