Pumpkin Pie Quinoa Porridge

Porridge. Doesn’t it just conjure up images of Goldilocks and three bears? Well, this porridge happens to be JUST RIGHT! We are entering the season of all things pumpkin and I couldn’t be more excited! I adore pumpkin. With all of its health-promoting phytonutrients, gorgeous color, and delicious flavor…what’s not to love? Pair pumpkin with quinoa and you have a powerhouse breakfast! This porridge has just the right amount of sweetness and spice, along with several textures that keep your mouth happy. It is warm, comforting, and delicious…reminiscent of pumpkin pie. Enjoy!

Pumpkin Pie Quinoa Porridge 4

1 1/2 cups water
3/4 cup quinoa
1/4 cup chopped pecans
2 cups coconut milk
1/2 cup pumpkin
2 tablespoons coconut nectar
1 teaspoon pumpkin pie spice
1/8 teaspoon salt
1 teaspoon coconut oil
1/4 teaspoon vanilla
unsweetened shredded coconut
raisins, dried cranberries, pumpkin seeds

Combine water and quinoa in a large saucepan. Bring to a boil. Cover. Reduce heat to low and simmer for 20 minutes. When quinoa is finished, remove from heat and stir in chopped pecans. In a blender, blend together coconut milk, pumpkin, coconut nectar, pumpkin pie spice and salt. Pour this mixture into the quinoa. Cook over medium heat for about 10 minutes. Stir the quinoa occasionally. The quinoa should become thick and creamy. Remove from heat and stir in coconut oil and vanilla. Serve this porridge with unsweetened shredded coconut, raisins, dried cranberries, and pumpkin seeds. Delicious!
