I think I might have a peanut butter addiction. Seriously. I eat peanut butter everyday. Sometimes twice a day. O.k., who am I kidding…I eat it at least three times a day. I thank my lucky stars I don’t have a peanut allergy because I love it so much! Now, I must admit that I am a peanut butter snob. What is a peanut butter snob you may ask? Well, I make my own peanut butter out of natural peanuts and nothing else. No sugar, no additives, no artificial anything. Just peanuts. I am partial to Virginia Peanuts and I love Jungle Peanuts because they ease my mind about aflatoxin, but there are many varieties of peanuts that are delicious. I don’t want to eat any peanut butter that isn’t just whole peanuts!
These little treats are full of peanut butter goodness! The cinnamon and vanilla round out the flavors just right – these treats taste like a yummy peanut butter cookie with texture. I make these quite often and hide them in my refrigerator so no one else can have them, but that usually isn’t a problem seeing as I usually eat the whole batch in a couple of days. Did I just write that?!!
1 cup natural peanut butter
1 cup honey or coconut nectar
1 teaspoon vanilla
1 teaspoon ground cinnamon
4 cups puffed millet cereal
In a large bowl, mix together the peanut butter, honey, vanilla, and ground cinnamon. Stir in the cereal and mix until it is evenly incorporated. With slightly wet hands, form the mixture into small balls. Refrigerate until ready to serve. Makes 48 balls. (This recipe can be halved, but you will probably want to make the whole batch!)
