Peach Parfait with Avocado Cream 2This parfait is so refreshing for breakfast! I have made this many times and always enjoy it with peaches or nectarines. The avocado cream gives a sweet, yummy richness to this parfait and you can’t skip the nice crunch of the nuts! Avocados are rich in healthy fat, vitamin E, potassium, some B vitamins, fiber…I just love avocados! Peaches and Nectarines are in the same family and contain vitamins, minerals, and health promoting phytonutrients. I love to eat this parfait as a healthy and delicious way to start my day!

Peach Parfait with Avocado Cream

1/2 medium ripe avocado, pitted
3 tablespoons coconut milk
1 tablespoon fresh lime juice
1-2 teaspoons honey
Pinch of sea salt
1 medium peach or nectarine, pitted and chopped
Chopped nuts, for sprinkling on top (I recommend pistachios or pecans)

Scoop the avocado flesh into the bowl of a small food processor (fitted with the steel blade) or blender. Add the coconut milk, lime juice, honey, and salt. Process until thick and creamy, stopping once or twice to scrape down the sides of the bowl with a rubber spatula. Place 1/3 of the chopped peach in the bottom of bowl or glass. Top with half of the avocado cream. Add another 1/3 of the chopped peach, then the remaining avocado cream. Complete the parfait with a final layer of chopped peach and a sprinkling of nuts.
