Healing Vegetable Soup

Healing SoupIt happened. I got sick. I made it through until February. And then my throat got scratchy. My head started to hurt. And the congestion, oh the congestion. I could hardly stand it! So, I made soup. Lots of healing soup. Everything in this soup points to wellness. I enjoyed hot bowl after hot bowl. And then I got better. Thank you healing soup!

Healing Soup 31 tablespoon grape seed oil or olive oil, optional

2 small leeks, cut in half and sliced

1 medium carrot, sliced

2 stalks celery, sliced

3 garlic cloves, sliced

1 zucchini, cut in quarters, sliced

1 yellow squash, cut in quarters, sliced

6 button mushrooms, quartered or sliced

2 cups cubed butternut squash

4 large kale leaves, middle stem removed, chopped

1 (15-ounce) can white cannellini beans, rinsed and drained

8 cups vegetable broth

2 cups cooked quinoa

1/4 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon dried rosemary

1/4 teaspoon dried thyme

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Heat large pot over medium heat. Add oil, if using, cook leeks, carrots, celery, and garlic until softened. Add in zucchini, yellow squash, and mushrooms. Cook for a few minutes. Add in butternut squash, kale, beans, vegetable broth, and spices. Bring to a boil. Reduce heat to low. Cover and simmer for 30 minutes. Add in cooked quinoa. Taste for seasonings. Serve.
