Dijon Vinaigrette

This dressing is one of my favorites! It is so versatile in its application as it can be used to add flavor to a variety of dishes. You can flavor tofu, tempeh, mushrooms, or steamed vegetables…the key is to use your imagination and try it in different dishes! I showcased this dressing over some beautiful purple sweet potatoes and voila! A sweet potato salad that was divine! You don’t need fat to give dressing flavor or body. The key is to use mustard and fruit paste, which gives the needed body and texture, and using fresh spices and herbs gives ample flavor. I recommend trying this dressing over spicy/bitter greens because the sweetness of this dressing really helps to cut through the bitterness. Enjoy!

Dijon Vinaigrette 2

1/4 cup dijon mustard
1/4 cup Apricot Paste
1 1/2 tsp liquid sweetener
1 1/2 tbsp shallot, minced
1/2 cup rice vinegar
1/4 tsp freshly ground black pepper
1 clove of garlic, minced
1 tbsp tarragon, minced
splash of orange juice or water to thin (optional)

In small bowl, whisk Dijon, vinegar, Fruit Paste, sweetener, shallot, garlic, tarragon and black pepper well. To thin, feel free to use a splash of orange juice or water. If using a jar of similar container, pour all ingredients into the container, close with lid and shake vigorously. (Recipe Source: Rouxbe)
