You know the 3’oclock snack/treat craving? Well, it hit me today. Big time. Now, I normally take a date, spread it with peanut butter and top it with chocolate chips, but I decided to mix it up a bit today and get creative. The result? A yummy snack that reminds me of a chocolate covered macadamia nut with coconut! I think I could have eaten the whole batch! This would be a perfect pre-workout or post-workout snack…or a no workout sit on the couch snack! (wink-wink) There is plenty of potassium, fat, and antioxidants to keep you going strong! Love these little bites!
2 cups whole pitted dates
1 cup unsweetened shredded coconut
1 cup macadamia nuts
1/4 cup + 2 tablespoons unsweetened cocoa powder
1/4 cup water
Process dates, coconut, macadamia nuts, and cocoa powder in a food processor until the nuts are finely chopped. Add the water and pulse until the mixture forms a rough paste. With moistened hands, shape heaping teaspoons into balls, then roll them in coconut to coat. They will keep in the refrigerator for up to a week. Makes about 25-30.
