Banana Buckwheat Bread

This is a different version of banana bread. It is incredibly delicious. It borders on addictive in my humble, banana bread loving opinion. I love the rich flavor of this bread – it borders on an almost butterscotch-type flavor. Despite its name, Buckwheat flour is actually gluten-free (happy dance) and is not really a grain, but a fruit seed. Buckwheat is rich in nutrients. Jungle peanuts are a favorite of mine. Ironically, like so many nuts, the Jungle Peanut is not actually a nut but is in fact a legume of the pea family; even though it is regularly categorized along with other nuts. Being raw, Jungle peanuts retain more protein and nutrients than cooked nuts. They give a nice crunch element to this bread and they are quite pretty. I think you will really like this bread. I enjoyed several slices with a nice cup of tea. Ahhhh. Go on and get baking!

1 cup buckwheat flour

1/2 cup gluten free flour

2 tsp ground flax seeds

1/2 tsp vanilla extract

3/4 tsp cinnamon

3/4 tsp salt

1/3 cup coconut nectar (or maple syrup)

2 bananas, mashed

1/2 tsp apple cider vinegar

1 tsp baking powder

1/2 cup applesauce

fold in:
1/4 cup mini dark chocolate chips
1/4 cup jungle peanuts

topping:
sprinkle of mini chocolate chips and jungle peanuts

Preheat oven to 400 degrees and line a small bread loaf pan with parchment paper or grease with coconut oil. Add bananas to a large mixing bowl and mash very well. Add in the applesauce to assist in the mashing. Then add in the vinegar, vanilla extract and coconut nectar too. You should have a very liquidy banana mash now. Fold in the flours, salt, cinnamon, baking powder, flax seeds, dark chocolate chips and peanuts. Fold very well until a wet and very thick banana batter forms. Pour this mixture into the loaf pan and smooth with a spatula. Sprinkle dark chocolate chips and peanuts on top. Bake at 400 degrees for 35-40 minutes or until edges start to brown. Cool before slicing and serving.
